Vegan Banana Cake
My nephew is vegan and our youngest is vegetarian so when we had a family get together a few weeks ago I searched online for a recipe to make something tasty that everyone could enjoy. We had a couple of very sad looking bananas in the fruit bowl too so I set off in search of a banana cake recipe.
I found this great recipe on the BBC Good Food site. The recipe calls for 3 brown bananas and I only had 2 old bananas and no 2lb loaf tin so I made some tweaks. As it turned out so well I thought I'd share it here.
To make my version of Vegan Banana Cake you will need:
2 brown or going brown bananas
50g vegetable oil (3.5 tablespoons)
60g brown sugar (2oz - 1/3 cup)
150g SR Flour (5.25oz - 1 1/4 cups)
1 tsp baking powder
1 tsp cinnamon
Heat the oven to 180 c (350 f - gas 6) and line a 8" square cake tin with baking parchment or greaseproof paper.
Peel the bananas then mash them with a fork in a bowl.
Add all the other ingredients and mix with the fork until everything is mixed.
Dollop (technical expression) the mix into the lined cake tin , spread out with a scraper or the fork. It's quite a thick mix.
Pop in the oven for somewhere between 15 and 18 minutes. Check it with a metal skewer or knife. If comes out clean then give the cake is done, if not then give it a few more minutes in the oven.
Perfect with a cuppa. This cake is best eaten the same day.
I've made this twice now, the first time it was all eaten immediately. The second time we had less people at home so some was left until the next day. It was ok, but a little drier than on day 1.
It is pretty sweet, I think you could probably try reducing the sugar depending on your taste. It takes less than 20 minutes start to finish to bake so I guess you could experiment, I know I will be.
